Food Engineer & Mum

About Ana — Food Engineer & Busy Mum

Hi, I'm Ana. Based in the Netherlands and trained as a food engineer, I realized after becoming a mum that most online sourdough advice is built for commercial bakeries—not real family kitchens.

When I started baking for my family, I fell deeply in love with clean, long-fermented sourdough at home. I cared about simple ingredients and natural digestibility—but I didn't have 14 uninterrupted hours to hover over a mixing bowl between naps, errands, and family life.

After years of testing, failed loaves, and applying food-technology principles to home fermentation, I stripped artisan sourdough down to the steps that actually matter: just 15 minutes of active hands-on time in a normal home kitchen, guided by dough temperature, aliquot rise percentage, and starch science rather than rigid clock schedules.

"Nobody tells you this when you start: sourdough isn't just a recipe you measure—it's fermentation science guided by nature. Once you understand the why behind temperature and gluten tension, the dough fits around your family's day instead of running it."
Food-Tech Precision Trained in food engineering & fermentation kinetics—no mystical rules or guesswork.
15-Min Busy-Mum Workflow Built in a real home kitchen for busy family schedules—4 ingredients and overnight fridge retards.
Zero-Waste Kitchen One active starter powers weekend country loaves, weekday seeded bagels, and sweet bakes.

Why My "Busy-Mum Food Engineer" Method Works

Most beginners fail because recipes give rigid clock times ("bulk ferment for 4 hours") instead of teaching you how to read your dough temperature and volume rise.

Open, lacy sourdough crumb structure 01

Read the Dough, Not the Clock

Use my Aliquot Jar & Temperature Chart to nail the 50–70% bulk fermentation sweet spot whether your kitchen is 19°C in winter or 25°C in summer.

Let the Basket & Fridge Do the Work

Three quick coil folds build gluten tension, then a 12–16 hour overnight cold retard at 4°C locks in blistered crust, lactic-acetic balance, and effortless scoring.

The 3 Signs of a Perfect Bake

Steam-trapped oven spring in the first 20 minutes, deep Maillard caramelization, a 96–98°C core, and the classic hollow knock on the bottom crust.

Frequently Asked Sourdough & Order Questions

Everything you need to know about baking around a busy family schedule, starter troubleshooting, flour swaps, and how your Member Account & 30-Day Guarantee work.

1. Do I already need an active sourdough starter to use "Your First Loaf"?

No! Start with our Free 7-Day Starter Cheat-Sheet using just flour, water, and a clean glass jar. By Day 7 your wild starter is vigorous and ready for Page 1 of Your First Loaf: The Easy Sourdough Guide.

2. How much hands-on time does a loaf actually take if I work full-time or have kids?

About 15 minutes of active hands-on work total: a 5-minute mix, three 30-second coil folds spaced 30 minutes apart, and a 3-minute shape before your fridge handles the 12–16 hour overnight cold proof while you sleep.

3. Do I need a cast-iron Dutch oven, stand mixer, or expensive bakery gear?

No stand mixer is needed—our method is 100% no-knead stretch-and-fold. A Dutch oven is great for trapping steam, and the guide also includes the exact "inverted baking tray + steam pan" method for standard home ovens.

4. Why did my starter stop bubbling on Day 3 or Day 4? Did I kill it?

You didn't kill it! Early Day 2 bubbles come from Leuconostoc bacteria. As healthy lactic acid drops the pH around Day 3–4, the jar goes quiet right before true acid-tolerant wild yeast takes over on Days 5–7.

5. Why did my loaf come out flat, dense, or gummy inside?

90% of dense beginner loaves are actually under-fermented (baked before the yeast produced enough gas) or sliced while still steaming hot before the crumb sets below 35°C. Our 1-Page Visual Crumb Diagnostic inside the guide shows you how to spot the difference in 10 seconds.

6. Can I use standard supermarket bread flour, spelt, or whole wheat in Europe or the US?

Yes—the guide gives exact protein % targets, European & US flour equivalents (French T65, Dutch Tarwebloem/Patentbloem, Italian Manitoba, US Bread Flour), and our interactive Hydration Calculator adjusts water automatically.

7. How do I pause my starter when we go on holiday or I only bake twice a month?

Feed it a stiff 1:2:2 ratio (e.g., 25g starter : 50g flour : 50g water), let it sit 1 hour on the counter, then store it sealed in the fridge at 4°C for up to 3–4 weeks without feeding. Revive with one warm feed the night before baking.

8. How do I receive my e-books and Video Masterclass after purchase?

Instantly—as soon as you complete checkout, your PDF + EPUB guides and 4K video lessons unlock immediately inside your CrumbCraft Member Account and arrive in your inbox from hello@crumbcraftculture.com (and for any order questions or support, reach us anytime at info@crumbcraftculture.com).

9. How does the CrumbCraft Club 30-day free trial & Bakers' Community Hub work?

Every Your First Loaf guide and 4K Video Masterclass includes 30 days of free access to the Bakers' Community Hub inside your Member Account—where fellow bakers help each other daily in #starter-help and #crumb-diagnosis and Ana joins the monthly live Q&A. Cancel in 1 click anytime inside your account.

10. How does the Conditional 30-Day "Better Loaf" Guarantee work?

If your loaf flops within 30 days, submit the quick 3-Field Crumb Diagnosis & Guarantee Form inside your Member Account (or email info@crumbcraftculture.com) with 2 photos—your starter/dough and your sliced loaf—plus your room temperature. If our tailored adjustment still doesn't give you a risen loaf on your retry bake, we refund 100%.
